Maturity, Sugar & Alcohol
Despite the fact of being an old vineyard the solar orientation is so well designed, that each grape is touched by the solar light from almost every angle.
Why is this so important?
Because the SUN is probably the most important factor to get the right balance of sugars and maturation of the fruit, resulting in color, taste and flavor.
Fueled by the sun the leaves act as solar panels producing sugar! To assess maturation of the grapes we constantly measure the sugar levels in the last weeks before harvesting.
These sugars will then be transformed into alcohol trough fermentation. Alcohol in the wine is mainly the processed sugars.
